Pace Avenue Take Out (PATO) is a project of Chef Ginger Ryan. She retired as the Founder & CEO of Chiricahua Community Health Centers, Inc. in December 2013 and travelled to Calabria, Italy where she studied at the Italian Culinary Institute earning a Master’s of Italian Cuisine. That original training has been augmented with courses at The French Pastry School; The Brooklyn Kitchen; Marrakech and Berber villages in Morocco; and, multiple venues across Southeast Asia including the Anantara Bangkok Riverside Hotel; the Legend Metropole in Hanoi; Angkor Phokeethra in Siem Reap, Cambodia; the Benthauh Market and Saigon Plaza in Ho Chi Minh City; and the Intercontinental and Peninsula Hotels in Hong Kong. These added to a lifetime of travel and study in Mexico and provided a repertoire of cross cultural and varied foods from around the world.
These trainings are utilized to provide healthy food, thoughtfully prepared and seasoned with an eclectic approach to the joy of eating. Chef Ginger uses her own herb garden and green house for organic items.
Pace Avenue Take Out is an unusual food venue. Heather Sampson, the Bisbee Breakfast Lady and Truffle Maker extraordinaire, (and Ginger’s daughter) will greet you at the window. Heather’s ability is evident in the fabulous salads she makes and delivers each Wednesday at noon.
